Being diagnosed with Celiac disease or gluten intolerance means cutting out all gluten-containing breads. You can find gluten free loaves in most places, but many of these will need to be toasted to be edible. The texture varies widely among brands, but through lots of trial and error I’ve found my favorite storebought gluten free breads. Most of these options can be found easily within the US.

You can also make some great loaves at home, but I think it’s important to have the right expectations for gluten free baking. Gluten free versions are going to be different from the gluten-containing variety if the food you’re recreating isn’t naturally gluten free (like bread). This is okay! It’s a chance to figure out the right flours and recipes for yourself, and adapt these to suit the styles of gluten free bread you enjoy.

There are even paleo and keto bread recipes, if you have additional dietary restrictions. Keto recipes will probably include a lot of eggs, along with nut flours and perhaps additional binders that are not starch-based. Paleo breads will have a similar lineup, but may also include cassava/tapioca flour, honey, or other starches that are not grains.
