Review: Collagen Protein Bar from Bulletproof

Bulletproof, best known for their Butter Coffee and MCT oil, also offers a line of gluten & dairy free collagen protein bars. Like most Bulletproof products, it’s fully keto compatible. At $2.79 a pop, they aren’t cheap — especially given their small size. But they are filling, and their ingredients list is pretty impressive. They come in Berry Cobbler, Café Latte, Cookie Dough, Fudge Brownie, Lemon Cookie, Mint Chip, and Vanilla Shortbread (the one i’m trying).

It’s not easy to find a good keto snack that’s also gluten and dairy free. So let’s see how it fares.

The star of the show is the hydrolyzed collagen and MCT oil (despite cashew butter being the first ingredient). As you can tell, this isn’t your typical protein bar and it certainly doesn’t taste like one. It’s both oddly crumbly and a bit oily at the same time. Frankly, it’s a weird bar. The collagen sticks to your teeth as you eat it. Despite this annoyance, I rather like the flavor, and I like how refreshingly different this product is. While you can unfortunately tell that it’s sweetened by stevia, it’s not too noticeable. It’s a reasonable tradeoff for the absence of any added sugars (the whole bar only has 4g net carbs). The shortbread flavor comes through nicely and it’s a welcome flavor that you don’t see often enough in this kind of product.

The good

  • It’s a pretty unique approach to a protein bar. It’s nice to see an option that tries to be different.
  • Great for keto diets while also being allergen-sensitive.
  • High quality ingredients

The bad

  • Sticks to your teeth
  • Very crumbly. If you keep it in your backpack, expect it to be in several pieces once you unwrap it.
  • Has a mild stevia aftertaste

Overall, these Collagen Protein Bars are worth trying unless you have a conservative palate. You might not like that it sticks to your teeth, or the stevia aftertaste. For some reason, didn’t mind these shortcomings. The product is really unique in several ways, and it offers some welcome variety in a sea of very boring and similar protein bars. I could see these being pretty polarizing, so I’d definitely try a single bar before making a larger investment.
