Bún bò huế is a Vietnamese soup that is naturally gluten free. Phở is the most popular Vietnamese soup in the US and is usually gluten free as well. Bun has a fresher, more complex broth and a different noodle shape with a chewier texture.
Bun bo hue uses cylindrical rice noodles that have a hollow middle, so they become chewy and hold the flavor of the soup very well. The broth is made from pork, beef, oxtail, and shrimp paste, and traditionally includes lemongrass, onion and other herbs and spices to balance the savory flavor. Congealed pork blood and tendon will often be served in slices with the soup. Like pho, this soup has a variety of herbs for topping. These include cilantro, mint, banana blossom, bean sprouts, lime, and fish sauce to taste.
